Puff pastry envelopes filled with vegetables and feta cheese

Slowly brown the sesame in a pan without fat, at a low heat. Caution: sesame browns really quickly and should not turn too dark. When browned, the sesame acquires a fine, nutty taste. Preheat oven.

Cut the puff pastry into large squares of equal size. For the filling cut all the ingredients into small cubes, mix these and season with sesame and salt and pepper. Place the filling in the middle of the squares, brush edges with water and then fold all four corners inward to form envelope shapes.

Brush the filled envelopes with egg wash for a nice golden brown finish and sprinkle with sesame. Bake in the preheated oven at 200°C for approx. 12-15 minutes until browned and nicely puffed. Remove baked puff pastry envelopes from oven and decorate with fresh basil.

  • 150 g feta cheese

  • 80 g pitted black olives

  • ½ yellow pepper 

  • ½ red pepper

  • 1 tbsp. honey

  • 1 tbsp. white sesame

  • Egg wash to brush pastry

  • Coarsely ground mixed pepper

  • Salt

  • Fresh basil
