Preheat oven to 220 °C.
Peel and core apples and cut into thin slices.
Melt crystal sugar in a pan till brown and caramelized. Take away from fire, stir with butter and put in the apples in a round shape. Sprinkle with cinnamon.
Roll out the pastry without baking paper and place nested on the apples. Pierce dough several times with a fork.
Bake for approx. 20 min. on a middle rack till golden brown.
Overthrow tarte, cut in slices and serve warm ideally with an ice ball.
